A Healthy Twist on Tradition
For many of us, our first experience with cooking was baking in an Easy Bake oven. You’d blend the powdered “cake” mix with water and bake it under the high-watt light bulb in the interior of the toy oven.
Growing up in Belarus, six-year-old Inna (Shapiro) Khitrik created her own version after being kicked out of her grandmother’s kitchen.
“So I went outside and took some bricks and put some fire and put a pot and cooked something there,” she reminisces. “I got some sorrel from the garden and some water, and I made sorrel soup!”
Khitrik’s early exposure to cooking didn’t end there. When her mother fell ill, her stepfather would leave her instructions for how to prepare meals for the family and then head off to his job as a shoemaker. The young teen would make the food and not only deliver it to her stepfather for lunch but also stop by the hospital to make sure her mother had a real meal as she recovered.
But this didn’t mean that her family supported her desire to get into the cooking business. They discouraged her from going to culinary school, saying Khitrik was “too small, too skinny, the pots would be too big.”
In spite of this, when Khitrik moved to the US in 1990 and settled in Auburndale with her family, she went to work at the Waban Market. At first she just worked behind the register but eventually found herself at the deli where she had her first opportunity to try some of her own dishes and ideas.
Eventually this led to Khitrik helping open the Carrot Top restaurant in Brookline (where the H & R Block offices now stand) and then to work as a personal chef. But with three children at home, Khitrik felt that she wanted more of a “regular schedule” so she went to work for the Jewish Community Housing for the Elderly. For twelve years she managed the kitchen at their Golda Meir House and helped with their very successful Meals on Wheels program. At its height, Meals on Wheels was delivering 12,000 meals a day, with Khitrik running the kitchen that produced them.
Throughout all of this, Khitrik had been looking for a location for her own restaurant, but she still didn’t have an exact idea of what she wanted to serve and what her concept would be.
And then, a wild platinum-haired messenger stepped in in the form of Food Network’s Guy Fieri.
